Fun ANYTIME, not just for birthdays – click to see the trick on how to make this exceptionally vibrant cake! p.s. THE “FROSTING” IS FAT FREE! and has become a fam-fav in our household.
Heres what you need:
Food Colouring Not just ANY Food colouring, you need GEL FOOD COLOURING – don’t skimp out on this- liquid just wont do. You can find them at craft stores or bulk food stores- anywhere you might find cake decorating supplies. I chose a package that was on sale at Micheals craft store for $18 CAN (similar to Joannes)
- Whipped cream (low-calorie/low-fat)
- Vanilla/French Vanilla, any sort of WHITE coloured Cake Mix- see the end the results with chocolate and white marbled mix
- Eggs (according to the cake mix)
- Vanilla Jello powder (we used diet)

Follow your instructions for making the cake mix.
After your done, separate even portions out into separate bowls and add a dab of gel colouring, you don’t even need 1/8 tsp to make the colours you see here, i used the tip of a baby spoon to get into the tiny jars and handed them off to my oldest son to mix away
We chose to use plain (white) and blue, green, purple and red. we started with the white and added some blue.. seemed to work ok!
Next we Added the other colors, in patterns, swirling it around to make it fairly even overall.
All the colours added. We tried a marbling technique as well the next one below that was white and chocolate then marbled, I’m not a fan of the outcome.
As you can see.. the tops BALLOONED, that’s my terrible packaged cake baking skills. i cut the top off one of them before stacking the cakes by using a large, long knife that could sit across the entire pan to keep the cut straight across.
When the cake is completed baking and cooling, make up the “icing”
Mix the whipped cream and the jello powder package together – DO NOT MAKE THE JELLO FIRST, just mix it in 🙂 whip it up to make it uniform
Obviously.. i have culinary arts skills displayed here with “icing” my cake. Make sure the cake is 100% cooled before putting on the whipped cream “icing” or it will melt off your cake.
I’m starting to drool looking at this.. amazing how delicious it is AND low-calorie!

Chocolate doesn’t really work out.. this is a chocolate cake with colour mixed into the white section (homemade cake) lemon filling
They all were delicious non the less! and enjoyable by all. I could probably work on my blending skills but I’m not an expert cake maker, I’m a regular, outside the home, hard-working mama
